If you're looking for an easy side dish for your meal, you have to try these Truffled Roasted Potatoes. These Potatoes are full of flavor from the spices, truffle oil, and parmesan cheese.

Truffled Roasted Potatoes
2 Pounds Yukon Potatoes, or Red Potatoes, Russet Potatoes
1 ½ Teaspoon Kosher Salt, or to taste
1 Teaspoon Black Pepper, or to taste
1 ½ Teaspoon Garlic Powder
1 Teaspoon Smoked Paprika
4 Tablespoons Truffle Infused Olive Oil
¼ Cup Parmesan Cheese, grated or shredded
1 Tablespoon Italian Parsley, minced
Preheat oven to 425F.
Clean and pat dry Potatoes. It is important to pat Potatoes completely dry as this will help them crisp while baking.
Dice Potatoes, then add them into a mixing bowl. Add in Truffle Oil, Salt, Black Pepper, Garlic Powder, Smoke Paprika and mix to fully coat potatoes.
On a foil lined baking sheet, lightly spray non-stick cooking spray, then add Potatoes and evenly spread on the baking sheet. Bake at 425F for 30-35 minutes uncovered, or until done to preference.
Once Potatoes are done cooking, remove from the oven and add on Parmesan Cheese and Parsley. If you would like, you can add some additional truffle oil.
