This Street Corn Skillet is an amazing appetizer that can be enjoyed for a snack, game days, and parties.

Street Corn Skillet
2 Pounds Frozen Whole Kernel Sweet Corn, thawed out completely
1/2 Teaspoon Kosher Salt, or to taste. (Be mindful of sodium in other ingredients as well. Add to your preference.)
1 Teaspoon Black Pepper, or to taste
1 Teaspoon Garlic Powder, or to taste
1 Teaspoon Onion Powder, or to taste
1/2 Cup Unsalted Butter, Melted
1/4 Cup Mayonnaise
1/4 Cup Sour Cream
1/4 Cup Cilantro, more or less if desired
2 Teaspoons Minced Garlic
1 Teaspoon Tajin with Lime seasoning, or to taste
1 Teaspoon Granulated White Sugar
Lime Zest, to top
8oz Cotija Cheese, to top.
(Parmesan Cheese can be used as a substitute.)

Preheat oven to 400F
In a 12-inch cast iron skillet or large baking dish add in thawed Corn (Pat Dry to remove excess moisture), Melted Butter, Kosher Salt, Black Pepper, Garlic Powder, Onion Powder and mix well.
Bake for 25-30 minutes. Every 10 minutes remove the skillet from the oven and stir well. Bake uncovered.
In a separate mixing bowl combine and mix well Mayonnaise, Sour Cream, Cilantro, Minced Garlic, Tajin, and Sugar.
When Corn is done baking, remove from the oven and let it cool for about 10 minutes, then combine mixture with Corn in the skillet. Top mixture with crumbled Cotija Cheese, Lime Zest, and Tajin.
