Blackened Rockfish Tacos


Ingredients

  • 1 Pound Rockfish filets, skinless

  • 1 Teaspoon Kosher Salt

  • 1 Teaspoon Black Pepper

  • 1 Teaspoon Garlic Powder

  • 1 Teaspoon Onion Powder

  • 1 Teaspoon Smoked Paprika

  • 1 Teaspoon Oregano

  • ¼ Teaspoon Ground Cayenne Pepper

  • 2 Tablespoons Avocado Oil, for seasoning fish

  • 2 Tablespoons Avocado Oil, for cooking fish


Fish Taco Sauce

  • ½ Cup Sour Cream

  • ⅓ Cup Mayonnaise

  • 2 Tablespoons Lime Juice

  • 2 Tablespoons Fresh Cilantro, minced

  • ½ Teaspoon Kosher Salt

  • ½ Teaspoon Black Pepper

  • ½ Teaspoon Garlic Powder

  • ½ Teaspoon Cumin

  • ½ Teaspoon Smoked Paprika


Additions

  • 4 Small Tortillas

  • Queso Fresco

  • Red Cabbage

  • Sliced Carrots


Notes:

If you prefer, you can use other types of fish to make this recipe.



Instructions


1. Pat dry room temperature rockfish filets. Lightly drizzle each filet with oil on both sides. Combine the following spices: salt, black pepper, garlic powder, onion powder, smoked paprika, oregano, and cayenne pepper; Then, sprinkle spice mix over each filet on both sides. Gently pat the spices into the filets.


2. In a skillet on medium-high heat, add in 2 tablespoons of oil. Once oil is hot, add in rockfish filets. Cook for about 2-3 minutes on each side or until the fish is fully cooked and gets a blackened crust on each side.


3. For sauce, in a bowl, combine and whisk sour cream, mayonnaise, lime juice, cilantro, salt, black pepper, garlic powder, cumin, and smoked paprika.


4. Assemble your tacos as you desire. Enjoy!
